Avocado Chocolate Pudding? Take every ounce of my money now!




Avocado is such a great idea for not only ice cream (whaaaaaa?  I know, it's so true doh!), but also pudding. When you put an avocado through a food processor and add chocolate it becomes a healthy treat that you don't need to feel bad about.  It will be naturally low carb and is packed with the healthy fats that women need for a myriad of health reasons.  I am not personally a fan of eating an avocado raw.  I cannot for the life of me explain why.  At almost 38 years old I still look at it and think "eww icky" (the total technical term for I do not like that), but in a smoothie, as a base for ice cream and now chocolate pudding?  I jump up and down and scream "Hercules!  Hercules! Hercules" super obnoxious like, but yet hilarious (so I tell myself anyway).  The added bonus here?  Gluten free, refined sugar free, and dairy free.  It's pretty much a fantastic raw treat that at no point in time do you need to feel bad about.  Can it be possible to have chocolate pudding that your body thanks you for?  It is.  Here's what you need and how to do it:


Ingredients:

  1. 3 large avocado, soft and ripe
  2. 1/4 cup cacao powder
  3. 3-6 tablespoons coconut milk
  4. 1 tsp vanilla extract
  5. 2 tsp coconut oil
  6. 2 tablespoons raw honey

      Directions
  1. Combine avocado, cacao powder, coconut milk, vanilla, coconut oil and honey in blender. Blend on high for 1 minute or until smooth.
  2. Refrigerate for 30 minutes


Serves:   2
