Recipe: Chocolate Crinkle Cookies


I was introduced to this recipe this past winter during a staff meeting in which we all had to bring some type of treat. I didn't have time to make one of my famous recipes (samoa cupcakes - I will be sure to share that recipe in the future!) so I opted for some store bought brownies. 

My boss was the one who brought them in and I loved how delicate and elegant they looked but most of all how frigging delicious they were!



Of course, I had to ask my boss if they took a lot of time prepare. She laughed and shared that it was one of the easiest recipes she's ever made.

She really had my attention now...

Here are the ingredients needed:

  • 1 box of chocolate cake mix
  • 1/4 cup of oil  replaced with 1/4 cup of organic coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • Confectioner sugar


After I realized, "oh snap! I've got these in my pantry", I wanted to make these for the holidays. 

That apparently did not turn out to be the case. Four months later and a case of major chocolate munchies I decided to finally whip them up for me and my husband. (mostly me though)


Instructions:

Preheat oven to 375
  • Place cake mix in bowl (or mixer as I did here)
  • Add 1/4 cup of coconut oil (I nuked it for 15 seconds so it could be in liquid form)
  • 1 tsp of vanilla
  • 2 eggs

Mix well. The consistency will be thick. Take a big spoonful and kind of roll it into an inch ball, lightly coat in confectioner sugar and place on cookie sheet covered with parchment paper. Spread them out a bit, these cookies will expand!

Allow 15-17 minutes,  remove from oven, let them cool and that's it.

Yup, that's it!

*note, the original recipe called for vegetable oil, I used organic coconut oil instead and they tasted amazing! - Let me know how they turn out for you. 

These cookies were husband approved!
