Guilt Free Fruit Dip - So Easy, SOOOOO Delicious!

Due to my current daily calorie goal being super-reduced, I have been on the lookout for lower calorie versions of things that will make my menu more interesting (read: not just chicken and vegetables all the time... booooo!).

A few weeks ago when we had our "3 Chicks" meeting, I tried out a couple of lower calorie fruit dip options from scratch (cheesecake and chocolate peanut butter).  While they were pretty delicious, the ingredients probably took away some of the "guilt-free" parts of the dip that made it so appealing in the first place (cream cheese, peanut butter, etc).  I was looking for something super easy and low calorie to make fruit more interesting.  Don't get me wrong, I like fruit.  But if I'm going to be giving up real sugar, I at least want it to feel like I'm misbehaving and having a treat.  I'm sure NOBODY can relate to that.

As always, I was over-complicating things.  I heard a while ago about funfetti cake dip where you mix Funfetti cake mix with cool whip to get an awesome dessert dip.  I wondered if there was a low-cal version of that since it sounded amazing.  Within the last year, Jell-O has come out with some awesome sugar-free flavors of pudding including Cheesecake and White Chocolate along with some others.  I thought perhaps these might make a decent substitute for the Funfetti mix, so I gave it a try with the cheesecake flavor.

Holy Crap.


This stuff was so good, I went through an entire recipe and two quarts of strawberries in about 24 hours.  That was not my intention and certainly not the healthiest option, but it is what happened.  The nice thing, however, was that my ingredients were so low-calorie that it didn't derail my calorie goal for the day too much and I got in a huge serving of fruit.   So now I'm sharing with you guys :)  

Guilt-Free Two-Ingredient Fruit Dip (Approx 18 calories per serving - 2 Tbsp)

Take 1 container Cool-Whip Free (Fat Free, Sugar Free)
Take 1/2 packet of any Jell-O instant pudding mix, any flavor you like, Sugar Free is best for lower calorie option

Mix 1/2 packet of pudding mix into the Cool-Whip container.  Stir for about a minute until it is smooth and the pudding mix granules have disappeared.

Refrigerate for about 10 minutes.  The mixture should be slightly thicker than regular Cool Whip consistency (thanks to the instant pudding).  Enjoy with your favorite fruit.  I prefer strawberries, bananas and pineapple, but it's really great on anything.  I've tried Vanilla and Cheesecake and they're both amazing.  As a bonus, you can store it right in the damn Cool Whip container!
